Sugar Cookie Recipes

At Christmas, I was longing to eat a sugar cookie from my childhood. Today's sugar cookies are so different from the "old ways."

I have decided to ask friends for their sugar cookie recipes and try them, to see if I can find the sugar cookie from my memories.

Also, I just realized that the icing I've been missing is Royal Icing. I'll post a recipe soon. 
I've used buttercream in the past, but I've missed the smooth, hard icing from my childhood, and I think that is Royal Icing.

Spring's Yam Oats

Written recipe:

In an Instant Pot:

Spray the pot with a vegetable oil like Pam, then add:

1 1/4 cup steel cut oats
3 3/4 yam juice + water
can of yams

Pressure cook on high for 10 minutes. Turn off the Instant Pot and let sit for 15 minutes. After 15 minutes, vent to release pressure.

Open the Instant Pot and smash the yams with a potato masher. Stir the oats and yams together.

My additions:
add 1/4 cup butter
1/2 cup firmly packed brown sugar. 
Let the butter melt and stir together & place in a 7 cup bowl with airtight lid to store in the fridge. Keep the lid off until the oat/yam mixture is cool.

This dish will store for several days. 
You can reheat a dishful in the microwave and add half & half to cool it off a bit and add more flavor.

1/2 cup of yam/oat mixture is 216.5 calories.

Steve's cabbage vegetable soup

Steve's cabbage vegetable soup

Ingredients/Shopping list:

1 head green cabbage (Don't use purple! - I have tried it, it is yucky!)

6 green onions (scallions)

2 red bell peppers (green works fine too - but the added color is nice)

1 whole stalk (bunch) of celery

2 large cans chopped tomatoes

1 package (envelope) onion soup mix

3 bullion cubes or equivalent

Instructions:

Chop up all vegetables and put in a 8 quart or larger stock pot or kettle. The size to cut them is from 1/4 inch to 1 inch - just however big you like vegetables in your soup.

Add the 2 cans tomatoes and the 3 bullion cubes (or paste or granules or whatever.)

Stir and add enough water to cover everything.

Bring to a fast boil and boil for 10 minutes. Then reduce the heat to a simmer (slow boil) and continue cooking until vegetables are tender. (The cabbage and celery are the ones to look out for. I like mine cooked for about 30 minutes! Some people like them crispier.)

Add seasoning (like poultry seasoning or additional salt) if desired.

Enjoy a bowl of hot soup. It smells good and tastes good. And it uses more calories to process than it gives your body. This is a negative calorie food!

Let the rest of it cool, and then refrigerate. I like to put mine in pint size jars to make it easy to grab a couple before heading out for the day.

Grandma (Ellen) Deveraux's Gingersnap Recipe

Recipe as told by Wendy, Dave's wife. 

4.5-5 c flour 1 c sugar
1 c shortening ( don’t use butter)
1 egg
2 T vinegar
1/2 t salt
1 c molasses
2 t ginger
1 t cinnamon
1 t cloves
1.5 t baking soda
Preheat oven to 375* degrees. Cream shortening and sugar. Add egg, vinegar and molasses. Beat well. Sift together flour ( I start with 4.5 cups), salt, soda and spices. Mix into creamed mixture. Wrap dough in plastic wrap and chill for at least one hour.
Flour board and roll dough to 1/8” thick and cut with cookie cutter. Re-roll dough until all is used. Transfer to baking sheets. Sprinkle with sugar. Bake for approximately 10 minutes. This will vary depending on how thick the dough is and the size of the cookie.
Cool on pans for a couple of minutes then transfer to cooling racks.
Grandma’s original recipe said you could use bacon grease if you don’t have shortening. It also said that you could use Karo Syrup or honey for the molasses. 🤗. I’ve never tried either of these. 🙂

Banana Bread Recipe

Banana Bread Recipe (Debbie's & Grandma D's I think) 

1 1/4 c. sugar
    1/2 c. shortening
         2   eggs
       2 c. flour
    1 tsp. baking powder
    1 tsp. soda
 1/2 tsp. salt
    3/4 c. sour milk
       1 c. mashed bananas
    1/2 c. nuts

Mix sugar, shortening, & eggs.
Mix dry ingredients together. Add (slowly) to the sugar mixture. Add milk, then bananas, then nuts.

Bake 1 hour at 350*. Check doneness by poking a toothpick in the center; done when toothpick comes out clean.

My spaghetti recipe

 How have I never added my spaghetti recipe before now?

Here it is, as I remember it - 

Cook 16 oz of spaghetti noodles as directed on the package. After cooking & draining, add a TSP of butter & stir through to keep the noodles from sticking together.

Brown 1 lb of hamburger with 1 medium onion & 3 cloves of crushed garlic. 
Drain grease and return to pan. 
To the meat mixure, add:
1 - 15 oz can of tomato sauce
1 heaping tsp of oregano
1 level tsp of basil
1 heaping tsp of salt
1/4 cup parmesan cheese
Stir together and heat to a simmer, reduce heat and simmer for 5-10 minutes.

Josh's Peanut Butter Chocolate Chip Cookies

2 cups flour
1 tsp baking soda

2 sticks butter
1 egg
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 tsp vanilla.

1 bag peanut butter or chocolate chips (or some of each!)

Preheat the oven to 375*

In a small/medium size bowl:
Mix the flour and baking soda together

In a medium/large bowl:
Mix the butter, sugar, brown sugar, vanilla and peanut butter. Add the egg and mix it up. Then add the flour mixture. Once it’s all mixed you add the bag of peanut butter/chocolate chips.

Bake at 375* for 8-10 min

Bread Sticks

Dough:
Mix in a bowl:
1 1/2 cups warm water
1/4 c. sugar
1 TBS yeast
Let the ingredients sit for 10 min.
While you are waiting, make the topping.

Topping:
Mix together in a separate bowl:
1/4 cup mayonnaise
1/4 cup grated parmesan cheese
1/4 cup butter or margarine (softened)
1/2 tsp salt
2 tsp garlic
Dough:
Add to the Yeast Water:
3 1/2 cups flour
Mix together - add more flour if necessary.
Spread dough in greased pan. Lightly cut the bread where the pieces will be, but don't cut all the way through.

Put the topping on the dough. Sprinkle Italian Seasoning on top.

Let the pan sit on the top of the oven while it is heating up so that it can rise a bit. Preheat oven to 400*.

Place on the middle rack and cook for about 10 minutes (longer if you like them crispier) until light brown.

Goulash recipe

Goulash -

16 oz box elbow noodles.
1 lb hamburger
1 can diced tomatoes (don’t drain)
1 tsp oregano
1/2 tsp basil
Salt to taste

Cook the noodles according to the box directions.

Meanwhile, in a skillet:

Brown hamburger, drain grease.
Add the spices and diced tomatoes. Stir and heat.

Add together the noodles and meat mixture. Serve.

Family Bread Recipe

7 cups flour
1/2 c oil
1/2 c sugar
2 c water
1 TBS yeast
1 tsp salt
1 egg

Put flour, oil, sugar, salt and egg in mixing bowl.
Dissolve yeast in body temperature water (test on the inside of your wrist.)
Pour water & yeast into the bowl. mix through.
Mix 2 minutes with a kitchen aid mixer or knead until elasticy.
Put in a big, greased bowl. Cover and rise until doubled in size. Punch it down.
Cut dough in half if making bread; shape and put each in greased bread pans.
For rolls: shape and put onto greased cookie sheet.
Whether bread or rolls, let rise again, until doubled in size.

Bread: Bake in a 350* oven until golden brown; about 40-45 minutes.
Rolls - Bake in a 350* oven until golden brown; about 15-25 minutes.

June's Grandma's Tuna Noodle Salad

June's Grandma's Tuna Noodle Salad

Cook 1 lb of Ditalini noodles as directed, and then stir in -
2 cups mayo
1/4 cup cream or milk (I used half & half)
2 stalks celery, chopped
4 green onions, chopped
2 or 3 cans of tuna (I used 2)

salt and pepper to taste (I used about 1 tsp of salt and 1/8 tsp of black pepper)
Stir together well.

If it is too dry after it sits, stir in a little more mayo. I am told it is even better after sitting overnight in the fridge.

Potato Salad

Potato Salad
(4th Printing - 1980 Betty Crocker's version, altered a bit for my preference)

2 lbs potatoes (about 6 medium)
1 1/2 cup mayonnaise
1 TBS vinegar
1 TBS mustard
1 tsp salt
2 stalks celery, chopped (about 1 cup)(optional)
2 or 3 green onions, chopped (optional) (or 1 medium onion, chopped)
4 hard boiled eggs, chopped

Boil potatoes, let cool. Cut up into bite size pieces
Hard boil eggs, let cool. Chop into small pieces.

Mix mayo, vinegar, mustard, and salt. Add potatoes, celery and onions. Stir in eggs. Cover and refrigerate.

SnickerDoodle Cookies

SnickerDoodle Cookies

Preheat oven to 350*

2 3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup butter
1 1/2 cups sugar
2 large eggs

In a small bowl, sift together flour, baking powder, & salt.
In a larger bowl, mix together butter & sugar until fluffy & pale; mix in eggs. Stir the flour mixture into the bowl with the butter, sugar & eggs.

In the small (empty) bowl, combine:
2 TBS sugar
2 tsp cinnamon.
Roll the cookie dough into balls and then roll the balls in the sugar/cinnamon mixture, coating them well.

Bake until edges are golden.

Bar Cookies (AKA Bars)

Bar Cookies:
2 sticks melted butter
3 cups graham crackers
Mix together and pat onto the bottom of a 9" x 13" pan.
Put the following layer on top (in order):
2 cups coconut
2 cups chocolate chips
2 cans sweetened condensed milk
Bake at 375 degrees for 35 minutes. Let cool completely. Yum!!

Ashlee's Berry (cream cheese & cool whip) Salad

Ingredients:
8 oz cream cheese
1/2 cup sugar
1 small yogurt (match to your choice of berry)
8 oz cool whip
3/4 bag of ( 8-10 oz bag ) frozen berries (or more or less as desired)
1/2 bag ( 10 oz ) white mini marshmallows (or more or less as desired)
sliced bananas

In a mixing bowl:
Cream sugar and cream cheese together. Mix in yogurt and thawed cool whip. Thaw and drain berries; fold in berries and marshmallows. 
Add bananas right before serving (they'll turn brown in the salad if left too long)

No Bake Cookies (Debbie's recipe)

This is a cookie recipe that my kids love and make a lot.

Put in a heavy kettle:

2 cups sugar
1/2 cup milk
1/2 cup margarine
3 TBS cocoa

Bring to a boil and boil for 2 minutes - stirring constantly when boiling.

Take off of heat and add:

3 cups instant oats
3/4 cup peanut butter
1 TBS vanilla

Drop by rounded tablespoons onto a greased (or waxed paper covered) cookie sheet.

Grandma D's Mincemeat Pie Recipe::December 8th

My cousin Patty posted this on facebook b/c other cousins were remembering my Grandma D's homemade mincemeat pies. I don't think I've ever tasted mincemeat, but I thought I'd store the recipe here so that I don't lose it :)
I think this is it:

Mincemeat
4 # venison elk or beef
Water
2 1/2 cups suet finely chopped or grated
7 1/2 cups chopped tart apples
3 cups of meat broth that meat was cooked in
5 cups sugar
3 cups apple cider
1 C. Molasses
1/2 C. Cider vinegar
3 C. Raisins
2 T. Ground cinnamon
1 T. ground cloves
2 T. ground allspice
2 T. ground nutmeg
Juice of 2 oranges
Juice of 2 lemons
1 C. Brandy
Trim and discard fat from meat
Place meat in large heavy pan and cover with water; simmer until meat is tender. Remove from heat and refrigerate meat in cooking liquid overnight.
Remove from fridge and take meat out of liquid. Remove all fat from top of
liquid; discard fat and reserve the remaining liquid. Chop boneless meat into small cubes.
In large pot combone meat , suet and all ingredients except brandy. Simmer gently for about about 2 hours or until desired consistency. Add brandy and mix together. (I doubt if mom or grandma added the brandy because kids ate it).
Its best to let mincemeat stand at least a couple weeks before using. Store in fridge. Freeze in airtight containers for long time storage. (Grandma and mom canned theirs)
Will keep looking in case there is another version of this.

Chili:: December 6

Ingredients:
4 cups dried beans
3 TBS beef bullion
2 TBS oil

Preparing and cooking the dried beans:

4 cups dried beans, cleaned (rocks and debris removed) and rinsed.

Put in a big pot or pressure cooker. Bring to a boil, take off heat, and let sit for at least 2 hours, more is preferable.
Drain and rinse beans, and rinse out the pot/pressure cooker.
Put the beans back in the pot/pressure cooker - add 8 tsp of beef bullion and 2 TBS of oil.
Using a pressure cooker:
Fill a pressure cooker with water to the line. Put on the lid and rocker. Bring to a boil on high, and when the it starts rocking, turn the heat down to med high and let rock for 25 minutes. Remove from heat and let it release from pressure on its own.

If using a large pot:
Cover the beans with water and add water about 2 inches below the top of the pot. Bring to a boil and let gently boil for about 45 minutes or until the beans are tender.

Meat mixture:

In a skillet brown:
1 lb hamburger
1 med. onion if desired

Drain grease and add:
2 can diced tomatoes (in juices) (or 1 can diced tomatoes + 1 oz can tomato sauce)
1 1/2 tsp dried oregano leaves
1 1/2 tsp ground cumin
1 1/2 tsp cocoa
1 1/2 tsp salt
4 1/2 tsp chili powder

In the big pot:
Pour off liquid from beans to make liquid level with the cooked beans. Add meat mixture & stir together. Cook over low heat for about 20 minutes.

Hot Chocolate Mix::November 2

Hot Chocolate Mix (from HM)
Makes about 17 cups of mix

10 2/3 cups instant nonfat dry milk
1 (6 oz) jar powdered non-dairy creamer *
2 cups powdered sugar
1 (16 oz) can instant chocolate drink mix

Combine all ingredients in a large bowl. Mix well. Put in a large airtight container. Store in a cool, dry place for up to 6 months.
*Option - try different flavors of creamer

Add 3 TBS Hot Chocolate mix to 1 cup hot water. Stir to dissolve.
